Ingredients List

  • 500 mL Yogurt
  • 1 Cucumber
  • 4 Cloves Garlic, fine diced
  • 4-5 Fresh Mint Leaves
  • Juice & Zest of 1 Lemon
  • Salt & Pepper, To Taste

Step 1
Rough chop cucumber and add to a food processor.  Pulse until texture is fine in consistency.  Remove and strain juice.

In a saucepan, add a touch of olive oil and add garlic.  Stir until all pieces of garlic are coated with oil.

​Turn heat on to low and slowly cook garlic until colour turns to light brown.  Remove from heat and set aside to cool.

Step 4
In a bowl large enough for all the ingredients add yogurt, cucumber, roasted garlic, mint (shredded) and mix until all ingredients are thoroughly incorporated.

Just before service, add lemon zest and as much of the lemon juice as you like.  Finish sauce with salt and pepper.  Taste and adjust seasoning if necessary.
