rOAST lAMB

ingredients list

  • 2lbs, lamb leg, de-boned & trussed (your butcher will be more than happy to do this for you)
  • 2 sprigs rosemary, rough chopped
  • 2 tbsp. rough chopped garlic
  • 4 tbsp. (60mL) olive oil
  • Salt & Pepper

Step 1

Preheat oven to 350 degrees.

On
the stove top, heat a pan to med-high level.  While pan is heating, rub lamb with oil, garlic, rosemary.  sprinkle with salt and pepper.

add oil to pan, place lamb in pan and sear on all sides, rotating every 3-4 minutes; your looking for a dark brown colour; not black!

Once all sides of lamb are seared, place pan in oven to roast.

Remove roast from oven, based off of your cooking preferences, as follows:
  • Rare:  12 minutes / 1lb
  • Med:  13 minutes / 1lb
  • Well:  14-15 minutes / lb
