Ingredients List

  • 2 Sweet Potatoes
  • 1 White Onion, Sliced
  • 4 Cloves Garlic, Sliced
  • Butter, To Taste
  • Salt & Pepper, To Taste

Step 1
Oven roast sweet potatoes @ 350 until soft and tender.  Remove and set aside to cool until you can handle with your hands.  Remove skin.

In a medium size stock pot on medium-low heat, add butter and melt.  Try not to boil the butter as it will split.

Add onions and garlic to the pot and saute for 5 minutes.  The onions and garlic should have no colour.

Step 4
Add sweet potatoes (diced) with enough water to cover the bottom of your pot.  Cover with lid and simmer until onions and garlic are tender and soft to the touch.  Remove from heat.

Using a food processor, blend mixture to a fine, smooth puree-like consistency.  Add more water and adjust with Salt if necessary to get your ideal puree-like consistency.  Serve Hot!
