Step 1
Rough chop cucumber and add to a food processor. Pulse until texture is fine in consistency. Remove and strain juice. |
Step 2
In a saucepan, add a touch of olive oil and add garlic. Stir until all pieces of garlic are coated with oil. |
Step 3
Turn heat on to low and slowly cook garlic until colour turns to light brown. Remove from heat and set aside to cool. |
Step 4
In a bowl large enough for all the ingredients add yogurt, cucumber, roasted garlic, mint (shredded) and mix until all ingredients are thoroughly incorporated. |
Step 5
Just before service, add lemon zest and as much of the lemon juice as you like. Finish sauce with salt and pepper. Taste and adjust seasoning if necessary. |
